Leg of Lamb Roast


Leg of Lamb Roast is an Italian family tradition often served around Easter.  Follow this simple and easy recipe and show off your culinary skills to family and friends. 


4-5 lb Leg of Lamb Roast
1/4 Cup Olive Oil
1 Tbsp Granulated Garlic
1 Tbsp Dried Rosemary
2 tsp Kosher Salt
1/2 tsp Black Pepper
2 Sprigs Fresh Rosemary
8 Cloves Fresh Garlic


  1. Preheat oven to 350 degrees
  2. Combine granulated garlic, dried rosemary, salt, and pepper into small bowl
  3. Place leg of lamb in roasting pan (do not use a roasting rack), coat entire leg in olive oil
  4. Thoroughly rub dry seasonings mixture on all sides of roast, coat well 
  5. Place fresh rosemary on top of lamb and surround the roast with halved garlic cloves
  6. Bake covered roast in oven for 2 hours
  7. Uncover and bake for an additional 30 minutes 
  8. Medium Rare - 145 degrees (pull from oven at 135 degrees, let rest for 3-5 minutes)
  9. Medium - 160 degrees (pull from oven at 150 degrees, let rest for 3-5 minutes)
  10. Well - 170 degrees (pull from oven at 160 degrees, let rest for 3-5 minutes)
